Sometimes you just have to think on your toes.
I always plan on having leftovers for lunch, and if I don’t have leftovers, I make PB&J or grilled cheese and we have raw fruit and veggies or a smoothie with it. We don’t make lunch very complicated around here. This mom needs low maintenance most days.
One day last week, much to my dismay, there were NO leftovers, NO bread for sandwiches, and very little in the fridge. What’s a girl to do? Raid my well stocked pantry of course.
I had some pasta, some random vegetables, olive oil, butter, garlic and fresh herbs.
While the pasta (rice pasta I think) was cooking in salted water, I got started on the “sauce”.
First I melted some a few tablespoons of butter and olive oil over medium heat. Then I sauteed some sliced mushrooms and a clove or two of garlic. I didn’t take time to measure them. It was about a handful. Next i added a handful of organic cherry tomatoes and several handfuls of spinach. After it was wilted and hot, I added some salt, pepper, and fresh herbs from the garden.
By now, the pasta was done and I drained it, added the “sauce”, and tossed in a generous amount of freshly grated Parmesan cheese.
Viola, lunch was served. Fifteen minutes start to finish.
This would have also been delicious with some quick sauteed shrimp, but I didn’t have any of those beauties. Note to self: Must get shrimp for the freezer.
My point in this post is lunch or dinner doesn’t have to be complicated or take a lot of time. Get creative with what you have and throw it together. You may be surprised with the tasty results!
