Scalloped potatoes and ham

A delicious and easy cheesy potato and ham casserole, perfect for a main dish or side item.
  • 2 T. butter
  • 2½ cups ham, cubed, preferably from pastured pigs
  • 1 cup onion, diced
  • 3 lbs. potatoes, sliced thin
  • 1½ tsp. sea salt
  • 1½ cup cream, preferably from grass fed cows
  • 1½ cup milk, preferably from grass fed cows
  • ¼ cup flour
  • 3 cups cheddar cheese
  1. Melt butter in skillet over medium heat.
  2. Add onions and cook until translucent.
  3. Add ham and heat through.
  4. In a measuring cup, mix together cream, milk, and flour.
  5. In a buttered 9x13 baking dish, add a layer of potatoes.
  6. Sprinkle ⅓ of the salt, ⅓ of the ham and onion mixture, ⅓ of the cheese, and ⅓ of the milk/flour mixture.
  7. Repeat layers 3 times.
  8. Cover and bake at 350 degrees for 30 minutes.
  9. Uncover and bake at 400 for 20-30 more minutes, until potatoes are tender and liquid is hot and bubbly.
  10. Let stand ten minutes before serving.
